Clean and
wash the Calamari, and prepare the stuffing:
finely chop the tentacles and prosciutto, then
add Raddichio (cut into thin, short strips).
chopped parsley, and garlic. Season with ground
pepper and mix well. Fill the Calamari with
the stuffing, closing the open ends with toothpicks.
Arrange the Calamari in cold oil in a pan, cover,
and slowly fry on both sides for 15-20 minutes.
Stuffed Calamari are best served with fried
potato halves, or any kind of seasonal salad.
Suggestion: to ease the filling process, the
open ends of the Calamari can be widened by
a small cut.
