Clean and
rinse the leg of lamb, separate the meat from
the bone and beat it with a meat pounder.
Mix together the lemon juice, rosemary, pepper,
oregano and crushed garlic and rub the lamb
with the mixture.
Roll up the meat and secure with toothpicks.
Heat some oil in a large fry pan, fry the rolled
meat on all sides, then place in a preheated
oven and bake at 300 degrees for about 2 hours.
Baste with the meat sauce and warm water from
time to time while cooking.
Finally peel the young potatoes, add them to
the meat and continue roasting.
When ready, remove the toothpicks from the roll
while still hot, cut into slices, and serve
with roasted potatoes and lettuce. (Serves 8)
